Inspired by Chef Paolo’s upbringing in Italy and the abundance of local produce that surrounds us in Southwest Colorado, the St. Elmo Tavern is dedicated to reimagining classic Italian and tavern-style dishes. By blending traditional techniques with the flavors of our region’s seasonal harvest, we aim to present familiar favorites in fresh, creative ways that celebrate both heritage and home.
